What is Oolong Tea?
Oolong is one of the most complex teas, kind of a halfway between green and black.
It takes the touch of a master blender to create the right flavour profile and consistency. To create Oolong tea, we skip the withering and rolling process we use for our black tea.
We lay the leaves in the sun to try and then put them into baskets and shake them. This “bruises” the leaves before we spread them out again in the sun. After two hours of this partial oxidisation, we take the leaves and fire them in hot woks, giving Oolong a rich dark-green colour and a crisp texture.
